Method14 steps · about 2 hr 25 min
Step 1: Heat ½ tbsp of the total 2½ tbsp oil over low heat. Roast the spice-paste red chilies or powder alternative, coriander seeds (2 tbsp), star anise (1), two 2-inch cinnamon pieces, cloves (4–5), ½ tsp peppercorns, five cardamoms and optional kalpasi about 1 minute.
Step 5: When they begin to sizzle, add the shallots (0.25 cup) and sliced onions (105 g). Regulate the heat to medium and sauté until transparent, for 5 to 6 mins.
Step 9: Add the ground spice paste from 3 and initially 2 cups from the variable hot-water gravy supply, using less if your selected meat needs less liquid. Mix and bring to a gentle boil.
Step 10: Cover and simmer until the same meat is nearly tender, about 90 minutes for bone-in goat. Stir every 15–20 minutes and add only as much remaining hot water as needed in batches; tenderness, not the clock alone, determines completion.
Step 11: Optional RAW-COCONUT route only: omit if choosing coconut milk or no coconut. Blend 35 g raw coconut, 1½ tsp fennel seeds, the one reserved roasted curry sprig and ½ tsp pepper with the separate ¼–⅓ cup coconut-paste water until very smooth.
Step 12: When the goat is fully cooked and tender, stir in only the optional paste from 11 OR canned coconut milk, or omit both. For the milk route, omit raw-coconut paste and add the one reserved roasted curry sprig, ½ tsp pepper and 1¼ tsp ground fennel. The author gives no exact milk amount; add to your preferred consistency/flavour. Bring the chosen coconut ingredient near room temperature first rather than adding it fridge-cold.
Step 13: If too thick, add only ¼–⅓ cup hot water from the remaining gravy supply. Simmer at least 10 minutes, turn off and rest 15–20 minutes. Allow for thickening as it cools and adjust with separate extra salt only if needed.
Step 14: Serve goat curry with rice, Chapati, Tandoori Roti, Naan or Ragi Mudde. You can also serve with Dosa, idli, Idiyappam or appam.
