Method8 steps
Step 1: Use the fresh-beet parboiling route. Have a pot and a blender ready, and keep the measured drinking water chilled while preparing the beet.
Step 2: Scrub the medium beetroot thoroughly with a kitchen brush. Trim off the dirty upper ring, leave the rest of the skin on and cut the beet into four pieces.
Step 3: Put the washed beet quarters from step 2 in the pot with enough separate cooking water to parboil them. Bring the water to a boil, then cook for about 20 minutes, checking until a knife passes through the beet without effort.
Step 4: Lift the cooked beet quarters from step 3 into a bowl and discard the cooking water. Once cool enough to handle, rub off the skin with your fingers. Let the peeled beet cool completely before blending.
Step 5: Measure ½ cup freshly squeezed orange juice for the blender. Prepare the juice before blending; no particular number of oranges is required.
Step 6: Measure the ½ cup chilled drinking water, 1½ tsp white vinegar, 1 tsp pure orange blossom water and 1 tsp sugar into the blender jug.
Step 7: Add all the cooled peeled beet from step 4 and the measured fresh orange juice from step 5 to the blender jug from step 6. Blend for about one minute, or until the drink is smooth.
Step 8: Refrigerate the blended drink from step 7 for at least 2 hours before serving as two small portions. It thickens as it chills: if needed, thin it with a little additional chilled water or fresh orange juice. Keep refrigerated and use within 3 days.
