Step 1: Cut the crusts off all six fresh bread slices.
Step 2: Roll back and forth three or four times over each bread slice with a rolling pin, flattening it until the fresh bread becomes slightly sticky.
Step 3: Whisk the large egg (1), milk (2 tbsp) and pinch of salt with a fork in a shallow dish large enough to hold a roll-up flat.
Step 4: Heat a large frying pan over high heat; the bacon will supply its own fat.
Step 5: Sear all six bacon slices on both sides until browned and cooked through but still flexible. Keep them from becoming brittle, so they can be rolled.
Step 6: Lay one browned bacon slice in the centre of each flattened bread slice.
Step 7: Roll each slice around its bacon, finishing seam-side down. Press lightly to help the seams hold.
Step 8: Wipe the frying pan clean, add the butter (1 tbsp) and keep the pan off the heat while you coat the rolls.
Step 9: Roll each of the six rolls in the prepared egg mixture and shake off excess. Lightly enclose each roll in your hand and twist it gently back and forth to work the coating in and seal the seam. Discard any unused egg mixture.
Step 10: Return the pan to the heat just until the butter melts, then add the coated rolls. Cook for around 3–4 minutes, turning regularly, until golden on all sides and the egg coating is fully cooked. Adjust the heat if they brown too quickly.
Step 11: Serve the six roll-ups immediately, three per person, with warmed ready nachos cheese dip if desired.
