Method9 steps · about 1 hr
Step 1: Cut the tempeh (200 g) into 1 inch cubes
Step 2: If desired, fry the cubed tempeh in vegetable oil as needed until golden, about 5 minutes, then set aside. Otherwise reserve the unfried tempeh cubes for step 6.
Step 3: In a separate pan, heat the 2tbsp vegetable oil on low heat. Add the cumin seeds (1 tsp) until they start to sputter, about 2 min.
Step 4: Add the shallots (3). Fry till they turn golden-brown, about 5-8 minutes.
Step 5: Add the garlic (2 cloves) and green chillies. Fry till fragrant, about 1 minute.
Step 6: Add the finely chopped half-tomato (½), reserved tempeh, coriander powder (1 tsp), chilli powder and turmeric. Stir-fry for 5 minutes. Add a small splash of water only if the mixture starts to catch.
Step 7: Add salt (to taste) and garam masala. Continue stir-frying for another 10 minutes.
Step 8: Add all the remaining ingredients (i.e., red onion (1), ginger (1 inch), green capsicum (½), roughly chopped tomatoes (½), coriander leaves (1 tbsp)) and cover the pan for 3 minutes.
Step 9: Remove the lid and stir-fry for another 2 minutes.
