Method4 steps
Step 1: Combine the coconut milk (¾ cup), canned pineapple juice (½ cup), brown sugar (3 tbsp), ketchup (2 tbsp), soy sauce (3 tbsp), lime (1) zest and juice, garlic (2), onion powder (½ tsp), cumin (½ tsp), paprika (½ tsp), ground ginger (1 tsp), optional cayenne (½–1 tsp) and salt (½ tsp) in a bowl. Before adding raw chicken, measure out ½ cup marinade into a separate clean covered container and refrigerate it for basting. Add all the chicken to the remaining marinade, cover and refrigerate for three hours.
Step 2: Drain the marinated chicken from step 1 and discard the liquid that touched it. Thread all the drained chicken onto eight skewers, leaving the clean half-cup basting reserve from step 1 refrigerated until cooking.
Step 3: Heat the tablespoon olive oil (1 tbsp) in a large skillet over medium-high heat. Cook all the threaded skewers from step 2, turning regularly to brown every side. Brush the already cooked faces with the clean reserved marinade from step 1, then turn those basted faces back to the heat for a few seconds to caramelize. Check from about six minutes, allowing roughly six to eight minutes or longer as needed until the thickest chicken pieces reach 74°C. Keep the clean reserve separate from the discarded raw-chicken marinade.
Step 4: Lift the cooked skewers from the pan in step 3 and serve warm, two skewers per portion. Serve with the optional separately cooked coconut-lime rice if desired.
