Step 1: Preheat the oven to 180°C / 350°F.
Step 2: Gently melt all the butter (⅓ cup) with the minced garlic (1) in it, then take off the heat.
Step 3: Cut the baguette into slices 1.5–2 cm thick, making about 25 slices including the ends. Lay them out on a work surface.
Step 4: Brush most of the melted garlic butter over every bread slice, including some of the minced garlic. Reserve the remaining garlic butter for brushing the assembled top.
Step 5: Spread the measured pizza sauce (⅓ cup) thinly over the slices. Top each with the optional diced onion, then mozzarella, then pepperoni (120 g), in that order; divide the measured toppings across all the slices.
Step 6: Stack six or seven topped slices at a time. Hold each stack at both ends and stand it snugly in a 22 cm square baking dish. Fit all the slices closely together so the cheese and pepperoni stay between the bread.
Step 7: Brush the top of the assembled bread with all the remaining garlic butter.
Step 8: Cover the dish with foil and bake for about 15 minutes at 180°C / 350°F, until the cheese is mostly melted.
Step 9: Remove the foil and bake for about 10 minutes more, until the top is golden brown and crusty.
Step 10: Remove from the oven, sprinkle over the optional parsley (½ tbsp) and serve immediately. Let guests pull off the slices. Share between eight snack portions.
