Step 1: Bring a large pot of blanching water to a boil and prepare a bowl of ice-cold water. Cut a shallow X in the base of each tomato. Blanch for about 30 seconds per batch, until the skins loosen, then lift into the cold water with a slotted spoon.
Step 2: Lift the cooled blanched tomatoes out, peel off their skins and remove the stalk cores. Quarter and blend to a fine pulp, then strain through a sieve to remove seeds and very thick pulp. Set the strained fresh tomato purée aside.
Step 3: Bring a separate pot of gnocchi water to a boil and season it with cooking-water salt. In a large pan, briefly fry the chopped garlic (1) and oregano in the olive oil (1 tbsp) without browning them. Add the prepared tomato purée with some sauce salt and pepper. Simmer for about 10 minutes, until reduced nearly by half and slightly thickened. Taste and adjust seasoning, adding the optional small pinch of sugar (1 small pinch) only if needed.
Step 4: When the sauce is almost ready, add the uncooked ready gnocchi to the separate boiling salted water. Cook until they float, following packet directions for cooking through. Lift them out with a slotted spoon, toss with the reduced fresh tomato sauce and serve in four bowls with grated Parmesan.
