Method10 steps

  1. Step 1: Cut the beef (12 oz) against the grain into slices, keeping them thick enough to hold together during stir-frying. Pat dry.

    Uses 12 oz beef

  2. Step 2: Mix the marinade baking soda (1 tsp), 1 tbsp marinade oyster sauce, 1 tbsp marinade light soy sauce, 2 tbsp marinade water, 1 tbsp marinade cornstarch, marinade white pepper (1/4 tsp), marinade sugar (1 tsp) and 1 tbsp marinade cooking wine.

Uses 1 tsp baking soda for marinade · 1 tbsp oyster sauce for marinade · 1 tbsp light soy sauce for marinade · 2 tbsp water for marinade · 1 tbsp cornstarch for marinade · 1/4 tsp white pepper for marinade · 1 tsp sugar for marinade · 1 tbsp cooking wine for marinade

  3. Step 3: Massage the sliced beef with the prepared marinade. Cover and refrigerate for 30 minutes while preparing the vegetables and sauce.

  4. Step 4: Cut the broccoli (1 lb) florets and peeled stem into bite-size pieces. Slice the carrot (1/2) thinly, prepare the small ginger (1 small piece) piece, cut the scallion (1) diagonally and mince the garlic (2).

    Uses 1 lb broccoli · 1/2 carrot · 1 small piece ginger · 1 scallion stalk · 2 garlic cloves

  5. Step 5: Mix the separate sauce ingredients: 1 tbsp sauce oyster sauce, 1 tsp sauce light soy sauce, dark soy sauce (1 tsp), 1 tbsp sauce water, 1 tbsp sauce cooking wine, sauce sugar (1 tsp), 1 tsp sauce cornstarch and sauce white pepper (1/4 tsp).

Uses 1 tbsp oyster sauce for sauce · 1 tsp light soy sauce for sauce · 1 tsp dark soy sauce for sauce · 1 tbsp water for sauce · 1 tbsp cooking wine for sauce · 1 tsp sugar for sauce · 1 tsp cornstarch for sauce · 1/4 tsp white pepper for sauce

  6. Step 6: Bring enough blanching water to cover the broccoli to a boil with the additional splash of oil and generous pinch salt. Add broccoli and cook about 2 minutes, or to your preferred texture. Drain; if not stir-frying immediately, cool briefly with running water and drain again.

Uses Prepared broccoli · Enough water to cover the broccoli for blanching · A splash cooking oil for blanching · 1 generous pinch salt for blanching

  7. Step 7: Mix the separate 1 tbsp beef-coating oil into the marinated beef. Heat the wok over high heat and add the 2 tbsp wok oil, swirling to coat it. Before adding beef, carefully pour clean excess oil into a heatproof container and reserve it for the vegetable stage. Reduce the heat slightly and add beef in an uncrowded layer. Sear 30–60 seconds until browned enough to turn, then 60–90 seconds on the second side until mostly browned; it will finish cooking with the vegetables. Remove the beef and set aside.

Uses Marinated beef · 1 tbsp cooking oil for beef coating · 2 tbsp wok oil supply; reserve clean excess

  8. Step 8: Return enough of the reserved clean wok oil to the pan for the vegetables. Stir-fry the prepared garlic and ginger 20–30 seconds, then the scallion and carrot 20–30 seconds. Add drained broccoli and cook 30–40 seconds. Return the seared beef and cook together 30–45 seconds. If needed, thin the prepared sauce with the separately listed optional 1 tbsp extra water.

Uses Seared beef · Reserved clean wok oil · Prepared carrot ginger scallion and garlic · Blanched drained broccoli · 1 tbsp extra water for sauce, only if needed

  9. Step 9: Stir the prepared sauce again and add it to the beef and vegetables. Stir constantly for about 1 minute, continuing until the sauce is thickened and the beef is cooked through. Stir in the sesame oil (1 tsp). If desired, use a little remaining reserved clean wok oil for a glossy finish; reserve any unused clean oil rather than adding another full dose.

Uses Beef and vegetables with optional sauce-water adjustment · Prepared stir-fry sauce · 1 tsp sesame oil · Optional remaining reserved clean wok oil

  10. Step 10: Taste the cooked beef and broccoli and serve promptly on a shared serving plate.
