Step 1: Thinly slice the 350 g ribeye across the grain if needed. Toss with 1 tbsp marinade soy sauce, 1 tsp marinade sesame oil, 1 tsp Chinese cooking wine, ½ tsp each baking soda, salt (0.5 tsp) and pepper (0.5 tsp), 1 tbsp cornstarch and the separate 1 tbsp marinade oil. Refrigerate for at least 20 minutes; mix the sauce while the beef marinates.
Step 2: While the beef marinates, mix the separate sauce supplies: 1 tbsp soy sauce, ½ tbsp dark soy sauce, 1 tbsp oyster sauce, 1 tbsp sugar, ½ tsp white pepper, 1 tsp sesame oil and 1 tbsp chili oil.
Step 3: After at least twenty minutes of marination, heat exactly 1 tbsp of the 2 tbsp stir-frying oil over high heat. Stir-fry all the marinated beef for about 2–3 minutes until browned and cooked; lift it out and keep ready.
Step 4: Bring enough water to blanch the broccoli florets to the boil. Blanch the florets for about 30–60 seconds, then drain and set aside.
Step 5: In the same pan, heat the remaining 1 tbsp stir-frying oil. Add all 4 minced garlic cloves and the finely chopped shallot (1); stir-fry over high heat for about 1 minute, until fragrant.
Step 6: Add all the drained blanched broccoli to the fragrant garlic-and-shallot pan and sauté for about 1 minute.
Step 7: Add all 2 cups cold ready cooked rice and the complete prepared stir-fry sauce to the broccoli pan. Stir-fry over high heat for about 2 minutes, separating the grains, until the rice is hot throughout.
Step 8: Return all the earlier cooked beef to the hot broccoli fried rice and give everything a final toss until combined and hot.
