Step 1: Peel all twelve large raw prawns, leaving their tails intact, and remove their digestive tracts carefully. Keep the actual peeled and deveined raw prawns ready for frying.
Step 2: Season all twelve actual prepared prawns with a little sea salt.
Step 3: Peel and thinly slice all three garlic cloves. Put all this sliced garlic, the hundred millilitres olive oil (100 ml) and all three whole dried cayenne chillies in a frying pan over high heat. As the garlic starts to turn golden, add all the actual prepared seasoned prawns. Fry for one to two minutes on each side until pink and fully opaque through the centres, continuing as needed to cook them through.
Step 4: Wash and chop the fresh flat-leaf parsley (1 tablespoon), measure one tablespoon and sprinkle all of it over the actual cooked prawns with cracked black pepper to taste. Serve immediately as two portions, taking care with the hot oil and pan. Spoon pooled oil as desired and keep any excess in the pan.
