Method10 steps · about 30 min
Step 1: Cut chicken (4) into bite-sized cubes and toss in 2 tsp soy sauce.
Step 2: Cut cucumber in half horizontally, then slice each half into ⅓-inch thick pieces on a bias.
Step 3: Cut bell pepper into 1-inch cubes.
Step 4: Mix together sriracha, brown sugar (2 tsp), remaining soy sauce and sesame oil (1 tsp). Taste and adjust the balance of the sauce.
Step 5: Heat a little cooking oil in a wok. Sear the soy-marinated chicken until browned on both sides; it will finish cooking in the final stir-fry.
Step 6: Remove the chicken from the wok.
Step 7: In the same wok, add more oil and saute garlic (4–5 clove) in it until golden.
Step 8: Add cucumber, about 1/4 cup water, and about 2 Tbsp of the sauce. Cook until the cucumber is almost done to your liking, adding more water if it becomes too dry.
Step 9: Return the seared chicken, add the cut bell pepper and remaining mixed sauce, and toss for about 1 minute, or until the chicken is fully cooked through. If you prefer softer pepper, add it earlier with the cucumber.
Step 10: Serve with jasmine rice. Enjoy!
