Method6 steps · about 30 min
Step 1: Coat the bite-size pork belly (180 g) pieces with the mirin and the pork-marination black pepper. Cover and refrigerate for about 15 minutes while preparing the other ingredients.
Step 2: Mix the stew base in a small bowl: gochugaru, soy sauce (1 Tbsp), gochujang, minced garlic (1/4 tsp) and the separate three sprinkles of ground black pepper.
Step 3: Cook the chopped aged kimchi (3/4 cup) in a skillet until soft. You may instead use the stew pot if it is large enough to stir the kimchi easily.
Step 4: Put the marinated pork at the bottom of the stew pot. Add the softened kimchi, sliced brown onion (1/4), sliced shiitake mushrooms (2), tofu, one cup water and all the prepared stew base. Keep the green onion aside until the end.
Step 5: Bring to a boil over medium-high heat, then lower to medium. Cook until the pork is completely cooked through, about 10–15 minutes from the start of this step. Gently stir the base into the broth and occasionally spoon broth over the ingredients. Once the pork is done, add the sliced green onion (1/2 stalk small), stir gently and turn off the heat.
Step 6: Serve the hot kimchi stew. Steamed rice and other Korean side dishes are optional accompaniments.
