Method3 steps

  1. Step 1: Put the whole fennel seed (1 tsp), Sichuan peppercorns (1 tsp), broken cinnamon piece, whole cloves (1 tsp) and broken star anise (1) into a small dry pan. Toast over medium heat until fragrant, moving the spices so they toast evenly. Faint sizzling may be audible; remove the pan from heat once the aroma is released.

Uses 1 tsp whole fennel seed · 1 tsp Sichuan peppercorns · 1 inch (2 cm) of cinnamon stick, broken into small pieces · 1 tsp whole cloves · 1 whole star anise, broken apart into petals

  2. Step 2: Transfer all the toasted spices to a small bowl and let them cool completely.

    Uses toasted whole-spice mixture

  3. Step 3: Grind the completely cooled spices in a clean coffee/spice grinder or with a mortar and pestle until fine. Transfer the powder to a dry airtight jar and keep in a cool, dark place away from direct sunlight. The batch makes about 2 tbsp.

    Uses completely cooled toasted spices
