Step 1: Preheat the slow cooker according to its instructions; choose HIGH for 4 hours total or LOW for 8 hours total.
Step 2: Peel the carrots (4) and onion and chop the onion. Cut the carrots into even sized chunks and cut the mushrooms (140 g) into quarters.
Step 3: Heat the olive oil (1 tbsp) over medium heat and fry the prepared chopped red onions for about 5 minutes until soft.
Step 4: Add the prepared carrot chunks to the softened onions and cook for 2 minutes, stirring. Transfer the cooked vegetables to the slow cooker with a slotted spoon.
Step 5: Brown the sausages in the same pan for 5–10 minutes, turning, then put them over the prepared vegetables in the cooker.
Step 6: Remove excess fat from the original pan. Add the canned chopped tomatoes (400 g), stock, tomato puree (1 tbsp), Worcester sauce (1 tbsp), dried herbs and pepper (½ tsp). Add the optional measured salt (½ tsp) only if needed.
Step 7: Bring the prepared sauce to a boil and pour over the sausages and vegetables in the cooker.
Step 8: Cover the complete prepared casserole and cook the first half: 2 hours on HIGH or 4 hours on LOW. The timer defaults to the HIGH option; use 4 hours for LOW.
Step 9: At the halfway point, stir the prepared quartered mushrooms into the partly cooked casserole.
Step 10: Mix the measured tablespoon of cornflour (1 tbsp) with the equal tablespoon of cold water (1 tbsp) and stir into the prepared mushroom-added casserole. Cover and cook the remaining 2 hours on HIGH or 4 hours on LOW, giving 4 hours HIGH or 8 hours LOW in total, until the vegetables are tender and the casserole centre reaches 74°C (165°F).
Step 11: Serve the fully cooked prepared casserole scattered with the optional chopped fresh parsley.
