Step 1: Preheat the fan oven to 160–170°C. Lightly grease a 28 cm round baking pan with the separate pan oil.
Step 2: Whisk the granulated sugar (1 cup) and 1 cup batter seed oil in a large bowl until evenly combined and the sugar dissolves.
Step 3: In a separate bowl, stir the orange juice (1 cup) and baking soda (1 tsp) with a fork until the soda froths and dissolves completely.
Step 4: Add the frothy orange-juice mixture to the sugar-and-oil mixture. Whisk thoroughly by hand or with an electric mixer until combined.
Step 5: In another bowl combine the self-rising flour (3 cups), ground cinnamon (1 tsp), ground cloves (½ tsp), raisins (80 g) and chopped walnuts (80 g) with a wooden spoon.
Step 6: Add the complete dry mixture to the prepared liquid mixture a little at a time while whisking. Mix until fully combined into a smooth, thick batter.
Step 7: Transfer the complete batter to the prepared oiled 28 cm pan. Bake in the preheated 160–170°C fan oven for about 45–60 minutes. Insert a toothpick into the centre: it should come out clean. If wet batter remains, bake longer and check again.
Step 8: Let the baked cake cool completely in its pan, then remove from the pan. Dust with the separate icing sugar as desired and cut into 8–10 portions.
