Step 1: Put the quinoa (1 cup) in a strainer, and rinse under running water (2 cups) until the water runs clear. Next, pour two cups of water into a bowl, and add the quinoa. Let it soak for a couple of hours before beginning the rest of the recipe preparation.
Step 2: Peel and finely chop the white onion (1). Peel and crush the garlic (2 cloves).
Step 3: Next, peel the carrot (1 large) and cut it in two, lengthwise. Then slice the carrot. Wash the celery (2 stalks) well, and slice it too. Finally, peel the sweet potato (1), and cut it into cubes. To prevent the sweet potato from turning black, soak it in water until ready to cook.
Step 4: Pat the chicken breast (1) dry and cut into approximately 2 cm cubes. Season with the teaspoon of salt (1 teaspoon) and oregano, and set aside while you fry the vegetables.
Step 5: Heat the oil in the soup pot over medium-high heat until shimmering. Add the prepared white onion and crushed garlic and sauté for about 5 minutes until the onion is translucent.
Step 6: Next, add the cubed chicken. Sauté for another six minutes, stirring occasionally.
Step 7: Stir in carrots, celery, and sweet potatoes. Stir very well.
Step 8: Drain excess water from quinoa, and add to pot. Immediately add the broth and bay leaf (1). Cook over high heat for about ten to fifteen minutes until carrots are tender.
Step 9: Lastly, add the chopped coriander and turn it off. Taste and adjust for salt (to taste). Extract the bay leaf and discard it. Serve hot with bread or corn chunks.
