Method4 steps
Step 1: Mix white miso, mirin (2 Tbsp), sake (2 Tbsp) and sugar (1 Tbsp). Coat the salmon fillets (4 pieces) in the marinade, cover and refrigerate for at least 3 hours or overnight.
Step 2: Wipe excess marinade carefully from the salmon. Choose either the oven or stovetop method below; discard the used excess marinade.
Step 3: Oven option: preheat to 450°F (230°C). Lightly oil a foil-lined baking sheet and place the salmon on it. Bake about 10–12 minutes, until 145°F (63°C) in the thickest part, or opaque and flaking easily. Skip the stovetop option.
Step 4: Stovetop option: heat a nonstick pan with a little oil over low heat. Cook the salmon on both sides until browned and 145°F (63°C) in the thickest part, or opaque and flaking easily. Skip the oven option.
