Step 1
Slice the pork shoulder into pieces about 1/4 inch thick.

Whisk the pineapple juice with vinegar, soy sauce, brown sugar, minced garlic, salt, pepper, and the red coloring.
Step 3
Coat the pork in the marinade, cover, and refrigerate for 24 hours.

Heat the oil in a skillet over medium-low heat.

Cook the pork for 10 to 12 minutes, turning it about once a minute so the sugary marinade does not scorch. Brown and caramelize both sides, and cook to at least 63 C / 145 F followed by a 3-minute rest.
