Method10 steps

  1. Step 1: Set the instant pot to saute function.

  2. Step 2: Add olive oil (1 tbsp) into the pot. Add beef (500 g) and cook and partially brown.

Uses 1 tbsp olive oil · 500 g Beef diced

  3. Step 3: Add diced potato (2), onion (1 large), carrot (1) and mushrooms. Saute about 10 minutes.

    Sauté beef-stew vegetables · 10 minUses Beef partially browned in olive oil · 2 potatoes diced large (or 300 g) · 1 large onion wedged (or 200 g) · 1 carrot cut randomly (or 120 g) · 5 white cup mushroom quartered (or 100 g)

  4. Step 4: Pour in the 250 ml red wine and 700 ml water. Scrape any browned bits from the bottom, add both bay leaves (2), then close and seal the lid according to your Instant Pot instructions. Set the Stew pressure program for 20 minutes; the countdown starts after the cooker reaches pressure.

Pressure Cook Stew · 20 minUses Sautéed beef and vegetables · 1 cup red wine(any kind) (or 250 ml) · 2 3/4 cups water (or 700 ml) · 2 bay leaves

  5. Step 5: After the pressure cycle finishes, turn off Keep Warm and let the pressure release naturally, following your cooker instructions. Open the lid only when the float valve has dropped and it is safe to do so. Keep clear of the hot steam.

  6. Step 6: Break the roux into small cubes and add to the pot.

  7. Step 7: Let the roux cubes dissolve by stirring the stew with a wooden spatula.

  8. Step 8: Keep the lid off. Use the low Sauté setting to gently simmer the roux-thickened stew for about 5 minutes, stirring frequently so it does not stick or scorch. Do not pressure cook the thickened sauce.

Gently finish the roux-thickened stew uncovered · 5 minUses Stew with dissolved roux

  9. Step 9: Turn the cooker off when the roux sauce is smooth and the beef and vegetables are tender. Remove and discard the bay leaves; there is no second pressure-release cycle.

    Uses Finished thickened beef stew

  10. Step 10: Serve the stew in shallow bowls. If desired, drizzle a little fresh cream over each serving and garnish with thyme.
