Step 1: Pour the 2 quarts soup water into a deep soup pot that fits the beef neck bones and liquid.
Step 2: Add the 4 lb raw beef neck bones, wedged yellow onions (2 medium) and 1 tbsp whole peppercorns. Bring to a boil, cover and lower the heat to a gentle simmer for 3 hours, until the meat on the bones is tender. Check occasionally and add additional water only if needed to maintain the soup liquid.
Step 3: Add the peeled sliced ripe saba bananas (4) and sliced baking potato (1 large) to the tender beef soup. Raise the heat to maintain a medium-heat boil and cook for 10 minutes, until the potato and banana are tender; continue briefly until tender if needed.
Step 4: Add both cleaned bok-choy bunches and the 2 cups Napa-cabbage pieces. Cover the pot and turn the heat OFF. Leave covered for 8 minutes so the residual heat wilts and partially cooks the greens.
Step 5: Stir all the 1/4 cup fish sauce into the hot finished soup.
Step 6: Transfer the hot soup to a serving bowl and serve ready-cooked white rice alongside.
Step 7: Share among six people. Keep the bones separate from the edible meat and serve the soup hot.
