Step 1: Cut the 5 oz thinly sliced pork into bite-size pieces. Thinly slice the 1 small onion, ½ small carrot and ¼ green bell pepper. Cut the cabbage into about 2-inch (5 cm) squares and measure 2 cups; wash and drain the 2 cups bean sprouts. In a separate bowl mix all 3 tablespoons tonkatsu sauce, 2 tablespoons Worcester sauce, ½ tablespoon soy sauce and ½ tablespoon mirin.
Step 2: Heat 1 tablespoon oil in a large frying pan over medium-high heat. Add the prepared pork and cook until browned. Add the prepared onion, carrot and bell pepper and stir-fry for about 1–2 minutes. Add all the prepared cabbage and drained bean sprouts and cook until wilted. Once the vegetables release moisture, tuck the 2 packets pan-reheatable chuka-men beneath them, lower the heat and cover for about 2 minutes until the noodles soften. Continue as needed until the pork and sprouts are cooked through and the noodles are hot and loose; prepare any uncooked noodle packet according to its directions before adding.
Step 3: Uncover and loosen the hot noodles, mixing them with the fully cooked pork and vegetables. Add all the prepared yakisoba sauce and stir-fry for about 2 minutes until everything is evenly coated. Season with salt and pepper to taste.
Step 4: Divide the cooked yakisoba between 2 plates. Sprinkle with aonori and top with benishoga to taste.
