  1. Step 1: Wash and chop the handful of parsley. Peel and finely chop the onion and cut the 9 oz smoked salmon into small pieces.

Uses 1 handful fresh parsley · Water for washing parsley · 1 white or yellow onion · 9 oz smoked salmon

  2. Step 2: Purée half of the prepared smoked salmon with all the cream until smooth. Add a little milk only if the mixture is too thick to blend.

Uses Half of the cut smoked salmon from step 1 · All the 8.5 fluid oz cream (source metric display 251.37 ml) · Milk, only if needed to loosen the blended salmon cream

  3. Step 3: Melt enough unsalted butter to sauté the onion in a deep skillet large enough to hold the pasta later; the source does not measure the butter. Sauté the prepared onion until soft. Add the remaining half of the smoked salmon pieces and sauté for about 1 minute.

Uses Unsalted butter, enough to sauté the onion; the source method requires it but gives no quantity · Chopped onion from step 1 · The other half of the cut salmon from step 1

  4. Step 4: Mix the blended salmon cream into the sautéed onion and salmon. Cook gently for about 1 minute and season with sauce salt and black pepper to taste.

Warm combined smoked salmon sauce · 1 minUses Purée of half the smoked salmon with cream from step 2 · Butter-sautéed onion and the other half of salmon from step 3 · Salt to taste, for the smoked salmon sauce · freshly ground black pepper. (to taste)

  5. Step 5: Bring a pot of water to a boil, salt it and cook the 14 oz short pasta according to its packet until al dente. Reserve 1 cup of cooking water, then drain the pasta and add it to the prepared smoked salmon sauce.

Uses Water for boiling the pasta · Salt for the pasta cooking water · 14 oz short pasta · Prepared sauce from step 4

  6. Step 6: Mix the pasta and sauce over very low heat. If dry, add a little of the cooking water reserved in step 5 to make it creamy and looser. Stir in some of the chopped parsley from step 1, keeping the rest for serving.

Uses Drained pasta and sauce combined in step 5 · A little of the reserved 1 cup water from step 5, only if needed · Some of the parsley prepared in step 1; keep the rest for serving

  7. Step 7: Turn off the heat, sprinkle with the remaining chopped parsley and serve immediately. Add grated Parmigiano only if desired, as allowed in the source notes.
