  1. Step 1: In a small bowl, mash together the 5 peeled minced garlic cloves, 2 stemmed sliced Hawaiian chili peppers and 1 tsp Hawaiian sea salt until incorporated.

Uses 5 cloves garlic, peeled and minced · 2 Hawaiian chili peppers, stems removed and sliced · 1 tsp Hawaiian sea salt

  2. Step 2: Put the separate 2 ounces white vinegar and 8 ounces water in a small pot and bring to a boil. Remove the pot from the heat and let the boiled liquid cool before combining it with the mashed aromatics.

Uses 2 ounces white vinegar · 8 ounces water

  3. Step 3: Put the mashed garlic, chili and salt mixture into a clean glass jar large enough for this batch. Pour all the cooled vinegar-water mixture over it, close the lid and shake a few times to combine. Place the jar in the refrigerator.

  4. Step 4: Keep the closed jar refrigerated for 2–3 days before using so the flavors can blend. This entire wait is cold; keep the condiment refrigerated after the wait as well.

  5. Step 5: Shake the chilled jar before using. Add only the actual desired small splashes as a condiment for food, and promptly return the remaining jar to the refrigerator. Use clean utensils and avoid returning food or used dipping liquid to the jar.
