  1. Step 1: Whisk the sugar (90 ml) and olive oil (450 ml) in a large bowl. In a separate cup stir the orange juice (90 ml) and baking soda (½ tsp) until dissolved, then add this to the bowl with the red wine (180 ml), ground cinnamon (1 tbsp), ground cloves (1½ level tsp), zest from 1½ oranges and roasted sesame seeds. Whisk until evenly combined.

Uses 90 ml sugar, measured by volume · 450 ml olive oil · 90 ml orange juice · ½ tsp baking soda · 180 ml red wine · 1 tbsp ground cinnamon · 1½ level tsp ground cloves · Zest from 1½ oranges

  2. Step 2: Sift the soft flour together with the baking powder. Add roughly half of this dry mixture to the wet mixture and begin kneading gently.

Uses Complete wet cinnamon-cookie mixture · About ½ kg of the flour supply in the first dry addition · Roughly half of the sifted baking powder in the first dry addition

  3. Step 3: Gradually add the remaining sifted flour-and-baking-powder mixture while kneading gently, stopping when the dough is smooth, soft and no longer sticky. The author allows slightly less or more flour depending on absorption; do not force in flour after the texture is right and do not overwork.

Uses Partly mixed cookie dough · Remaining flour added gradually, only as needed for soft nonsticky dough · Baking powder in the remaining sifted dry mixture, as added

  4. Step 4: Preheat the oven to 170°C and line two large baking trays with parchment. Shape the dough into cookies of your chosen shape, allowing space between them. Makes about 60–70 cookies, depending on size. If using the optional brown sugar (2 tbsp), sprinkle the 2 tbsp over the shaped cookies.

Uses Complete soft cinnamon-cookie dough · 2 tbsp brown sugar for optional topping

  5. Step 5: Bake the shaped cookies in the preheated 170°C oven for about 25–30 minutes, until nicely coloured and cooked through. If the trays do not fit together, bake in batches and repeat the bake timing for each tray. Let the baked cookies cool before eating.
