Method4 steps

  1. Step 1: Chop the pork (500 g) very finely. Crush the garlic (5 clove) and fry in 2–3 tbsp lard until light brown. Add the pork and roasted peanuts (3 tablespoons), then season with fish sauce and palm or granulated sugar to taste.

Uses 500 g pork · 5 clove garlic · sugar · fish sauce · 2–3 tbsp lard · 3 tablespoons of roasted peanuts, coarsely ground

  2. Step 2: Cook the pork completely through, breaking it into very fine bits so the filling holds together on the fruit. A little water at the beginning can help loosen it. Taste and adjust the fish sauce and sugar: the filling should be sweet and salty.

Uses a little water only if needed to loosen pork filling · pork fried with garlic, lard and roasted peanuts and seasoned with fish sauce and sugar

  3. Step 3: Let the cooked pork filling cool completely.

Uses pork fully cooked, broken into very fine bits and seasoned sweet and salty

  4. Step 4: Prepare your chosen fruit. Halve rambutans and remove their seeds, or separate mandarin orange segments, open along the back and lay flat skin downward. Alternatively, cut pineapple into bite-sized pieces as the author recommends. Top each piece with the cooled pork filling and garnish with picked coriander leaves and chilli.

Uses fruit (rambutans, mandarin oranges or pineapple) · Chilies · Coriander leaves · finely crumbled cooked pork and peanut filling cooled completely
