  1. Step 1: Preheat the oven to 220°C (425°F). Lightly grease a baking sheet with oil and put the ½ lb salmon fillet on it. Bake for about 10 minutes, continuing until the fish is opaque and flakes readily.

Initial salmon bake check · 10 minUses Oil, enough to lightly grease the salmon baking sheet · 1/2 lb salmon fillet

  2. Step 2: Using a fork, finely flake the baked salmon on the sheet. Remove and discard any skin and bones.

  3. Step 3: Heat a non-stick frying pan over medium to medium-low heat. Add all the flaked salmon and 1 tablespoon sake. Stir constantly for about 10 minutes, until the flakes are dry and the moisture has evaporated. Add salt to taste, up to the suggested ¾ tablespoon, ½ tablespoon mirin and ½ teaspoon toasted sesame seeds. Continue stirring and frying for a few more minutes until dry again. Remove from the heat and cool completely. This makes one jar-sized batch of salty salmon topping for separately prepared rice, noodles or rice balls.
