Method6 steps
Step 1: Rub the chicken (1) pieces with the chicken-rub salt (1 teaspoon) and turmeric (1 teaspoon). Keep covered in the refrigerator for 10 minutes.
Step 2: Heat the oil (2 tablespoon) in a frying pan over medium-high heat. Fry the rubbed chicken until browned and cooked through, about 10–15 minutes, continuing until its thickest part reaches 74°C/165°F away from bone. Remove the chicken, retaining the pan oil.
Step 3: Grind the whole onion (1), garlic (4 cloves), ginger (2-inch piece) and dried chillies into a paste. Fry the paste and bruised lemongrass (2) in the retained pan oil until fragrant, about 3–5 minutes.
Step 4: Add onion (1) slices and tomato (4) wedges. Cook until slightly wilted.
Step 5: Return chicken to the pan, season with tomato ketchup (4 tablespoon), salt (1 teaspoon), and sugar (1 tablespoon). Mix well, bring to a boil. Reduce heat to a simmer. Cover the pan and cook for 10 minutes so the chicken can absorb the sauce.
Step 6: Turn off the heat. Adjust with a little extra salt or sugar only if needed, transfer to serving plates and serve with optional ready steamed white rice.
