Method7 steps · about 25 min

  1. Step 1: Mix the sauce: 3 tablespoons soy sauce, 1 tablespoon rice wine or mirin (or 1 tablespoon lemon juice), 1 tablespoon sugar or brown sugar, 1 tablespoon minced garlic, 1 teaspoon grated ginger, 1 tablespoon sesame oil and a pinch of black pepper. Stir until the sugar dissolves.

Uses 3 tbsp soy sauce · 1 tablespoon rice wine (or mirin) (or 1 tablespoon lemon juice) · 1 tablespoon sugar (or brown sugar) (adjust to taste or use your favorite sugar substitute) · 1 tablespoon minced garlic · 1 teaspoon grated ginger · 1 tablespoon sesame oil · 1 pinch black pepper

  2. Step 2: Cut the chicken into bite size pieces.

Uses 1 pound skinless, boneless chicken thighs (or breast)

  3. Step 3: Mix the cut chicken with 3 tablespoons of the prepared sauce. Reserve the remaining sauce separately while you prepare the vegetables.

Uses Cut chicken · Prepared sauce: 3 tbsp for chicken

  4. Step 4: Tear the kale (8 ounces) off the stems into small pieces. Discard thick stems. Rinse thoroughly and drain well.

Uses 8 ounces kale · Water for rinsing kale and mushrooms

  5. Step 5: Give the mushrooms (6 ounces) a quick rinse, and cut into quarters (or halves if small).

Uses 6 ounces fresh mushrooms (white, crimini, or shiitaki) · Water for rinsing kale and mushrooms

  6. Step 6: Heat a large skillet over high heat with a tablespoon of cooking oil until very hot. Add the chicken pieces to the pan in one layer. Do not touch for a minute or two until the chicken is nicely seared. Flip them over and sear the other side. The chicken does not need to be cooked through at this point.

Sear first chicken side before flipping · 2 minUses Chicken with its 3 tbsp marinade · 1 tbsp cooking oil for stir-frying

  7. Step 7: Add the prepared kale and mushrooms and optional sliced chili pepper (or quarter bell pepper) to the seared chicken. Drizzle over the reserved sauce and add the optional crushed red pepper (1/4 teaspoon). Continue stir-frying until the vegetables soften and the chicken is cooked through; the source suggests about 3 minutes for the vegetables, so continue longer if the chicken needs it. Sprinkle over the optional sesame seeds (1 teaspoon) and serve hot, with cooked rice if desired.

Vegetable stir-fry guide; chicken must be cooked through · 3 minUses Seared chicken · Prepared kale · Prepared mushrooms · Reserved sauce remaining after the chicken marinade · 1 red chili pepper, or 1/4 red bell pepper (optional) · 1/4 teaspoon crushed red pepper - optional · 1 teaspoon sesame seeds - optional
