Step 1: Soak the peach gum (30 g) in cold water in the refrigerator for several hours or overnight, until softened and expanded. Drain, remove impurities, rinse and tear it into small pieces.
Step 2: Soak the dried snow fungus (1) in cold water for about 5 minutes, or until soft and fully hydrated. Drain, squeeze out excess water and tear into little pieces.
Step 3: Put the water (2 litres), peach gum, lemongrass (2 stalks) and pandan leaves (2) into a pot and bring to a boil.
Step 4: Reduce the heat to low, then simmer for 30 mins, stirring occasionally.
Step 5: Add the winter melon strips, cook until the colour turns translucent, about 5 mins.
Step 6: Add the snow fungus, red dates (8) and longan. Cook for about 30 mins.
Step 7: Add the rock sugar (150 g), then simmer for another 30 mins until the sugar dissolves.
Step 8: Add the wolfberries and cook for about 5 mins.
Step 9: Turn off the heat and add the calamansi juice (0.5 cup).
Step 10: Remove the cooked pandan leaves and lemongrass from the soup before serving.
