Step 1: Heat the oven to 180°C / 350°F and have the pie pan and ready shortcrust pastry available.
Step 2: Peel and chop the 750 g onions. Then heat the 2 tbsp olive oil in a frying pan over medium heat, with the chopped onions ready to add.
Step 3: Add the chopped onions to the hot olive oil and season with salt. Cook for about 20 minutes over medium heat, stirring regularly, until soft, lightly browned and almost caramelized; reduce the heat if they scorch. Take the pan off the heat and let the onions become warm rather than very hot before mixing them into the eggs.
Step 4: Beat the 4 eggs in a bowl. Whisk in all 200 g crème fraîche and 100 ml milk until the custard is evenly combined.
Step 5: Add the warm caramelized onions to the custard and mix evenly, leaving any unused oil in the pan.
Step 6: Cut the 150 g smoked bacon into small pieces and stir it through the onion custard. Keep the raw bacon and egg filling for immediate baking.
Step 7: Roll out the shortcrust pastry (1) and line the pie pan. Pour in the onion-and-bacon filling. Bake at 180°C / 350°F for about 40 minutes, until the pastry is cooked and the custard is set, with the center at least 74°C. If the edges brown before the center is ready, loosely shield them with foil and continue baking. Let the quiche settle until it can be sliced, then serve six portions.
