Method8 steps · about 1 hr 25 min

  1. Step 1: Prepare the 100 g banana-blossom supply for cooking according to its product instructions: if it requires soaking, soak until pliable, then drain the preparation water. Put the 2 lb raw cubed pork belly in a cooking pot and sear, turning, until brown and enough of its own fat has rendered to sauté the garlic. Keep the pork and its rendered fat together.

Uses 100 g banana blossoms · Additional water, only as needed for blossom preparation or to prevent dry simmering · 2 lb raw pork belly, cubed

  2. Step 2: Add the crushed cloves from the 1 garlic head to the browned pork and its rendered fat. Sauté for 1 minute, taking care not to scorch the garlic.

Sauté garlic · 1 minUses Browned pork belly and rendered fat · 1 head garlic, crushed

  3. Step 3: Pour in the 4 tbsp soy sauce and the separate 1 cup sauce water. Bring the pork and liquid to a boil.

Uses Pork and sautéed garlic in rendered fat · 4 tbsp soy sauce · 1 cup water for sauce

  4. Step 4: Add all 3 dried bay leaves and the 1 tbsp whole black peppercorns. Cover, lower the heat to a gentle simmer and cook for 30 minutes. Check the liquid occasionally; add only a little additional water if needed to prevent cooking dry.

  5. Step 5: Raise the heat to between low and medium, add the 6 tbsp white vinegar and let the sauce return to a boil. Stir to combine.

Uses First-simmered pork and seasoned sauce · 6 tbsp white vinegar

  6. Step 6: Add all the prepared, drained banana blossoms. Lower the heat to its lowest simmering setting and cook for another 30 minutes, until the pork is fork-tender and cooked through and the blossoms are tender. Continue gently only if the pork still needs it, keeping enough liquid to avoid scorching.

  7. Step 7: Stir in the 1/4 cup brown sugar and the complete 4 g Maggi Magic Sarap supply. Cook gently until the sugar dissolves and the seasoning is evenly distributed. Remove the bay leaves before serving.
