Method10 steps
Step 1: Use a little of the measured butter to grease a 1 litre pie dish, keeping the rest for the bread.
Step 2: Cut the crusts from all eight thin bread slices. Spread one side of each with the remaining measured butter, then cut into triangles. Reserve enough buttered triangles to make the final top layer.
Step 3: Arrange some buttered bread triangles, butter-side up, in the dish. Layer with some sultanas and cinnamon (2 tsp), then repeat until all the sultanas and cinnamon have been used, keeping the reserved bread for the top.
Step 4: Finish with all the reserved buttered bread triangles, butter-side up, so the top layer is bread. Set the prepared dish aside.
Step 5: Gently warm all the milk and double cream together over low heat until steaming and scalding hot, without allowing it to boil.
Step 6: Crack both eggs (2) into a bowl. Add three quarters of the measured sugar and lightly whisk until pale, keeping the remaining quarter for the top.
Step 7: Gradually stir the warm milk-and-cream mixture into the whisked eggs and sugar until combined. Strain the complete custard into a bowl.
Step 8: Pour all the custard over the prepared bread layers. Sprinkle with grated nutmeg to taste and the remaining quarter of the sugar. Leave to soak for thirty minutes.
Step 9: Heat the oven to 180°C.
Step 10: Bake the soaked pudding in the heated oven for 30–40 minutes, until the custard is set and the top is golden brown. Serve warm.
