Step 1: Before cooking, mince all 3 garlic cloves and enough ginger (1 tsp) to measure 1 teaspoon. Wash and slice the unmeasured garnish scallions and crush the unmeasured garnish peanuts. Bring a separate pot of water to a boil and cook all 150 g of your chosen noodles (150 g) according to their package. Begin the package timer only when the noodles start cooking; make the sauce while they cook and drain promptly when ready.
Step 2: In a bowl combine all 2 tablespoons peanut butter, 2 tablespoons sauce chili oil, 1 teaspoon sesame oil, 2 tablespoons soy sauce, ½ tablespoon rice vinegar, 1 teaspoon sugar and ¼ teaspoon salt with all the minced garlic and teaspoon of minced ginger prepared in step 1. Mix until combined. Loosen with 2–3 tablespoons of the separate hot sauce water (2–3 tbsp), adding within that listed range to reach a creamy consistency. Keep the additional garnish chili oil separate.
Step 4: Finish the complete sauced noodles from step 3 with ready-fried onions, the scallions sliced and peanuts crushed in step 1, a drizzle of the separate garnish chili oil, and sesame seeds. All garnish amounts are unmeasured. Serve immediately; the author gives no number of portions for this batch.
