Step 1: Stir both cups of dough flour (2 cups) and the one teaspoon of dough salt together in a large mixing bowl, distributing the salt evenly.
Step 2: Put the eight cups of cooking water and the half tablespoon of pot salt (½ tbsp) into a large pot and bring to a boil.
Step 3: Gradually work the measured cold dough water into the dry mixture with your hands until a firm dough forms. Stop adding water when the dough holds together. Use a little extra cold water only if it stays dry, or a little extra flour only if it is sticky, then knead lightly until smooth.
Step 4: Divide the dough into equal-sized pieces and roll each piece into a smooth ball.
Step 5: Flatten each ball with your palm into a thick round disc, keeping the discs a similar size so they cook evenly.
Step 6: Lower the shaped discs carefully into the actual boiling salted water one at a time. Gently stir with a wooden spoon to separate them and prevent sticking.
Step 7: Boil for fifteen to twenty minutes, stirring occasionally, until the dumplings are cooked through. Floating alone is not the endpoint: pierce a dumpling or cut one open to check that the centre is soft and fully cooked, with no raw sticky flour dough. Continue boiling if necessary.
Step 8: Lift the cooked dumplings out with a slotted spoon and let the excess cooking water drain back into the pot.
Step 9: Serve the drained dumplings warm, divided into four side portions.
