Step 1: Prepare chestnuts (500 g) by using kitchen scissors to remove the outer hard skin. Leave the astringent skin intact.
Step 2: Place them in a saucepan or pot and pour enough water to cover the chestnuts.
Step 3: Start to heat the pot over high heat to bring it to boil.
Step 5: Drain and discard the hot water. Cover the chestnuts with cold water so they cool enough to handle while staying moist.
Step 6: Carefully remove the thin astringent skins from all the chestnuts and set the peeled chestnuts aside.
Step 8: Place the washed and drained rice mixture in the rice cooker.
Step 9: Pour 2 cups of water and add salt (1 tsp) and sake (1 tbsp).
Step 10: Place the chestnuts over the rice.
Step 11: Close the rice cooker lid and set the rice cooker, following the rice cooker instructions.
Step 13: Serve in a rice bowl and sprinkle black sesame seeds (1 tsp).
