Step 1: Prepare all the rice noodles with water according to their actual package instructions, then drain and hold ready. In a separate bowl mix all the light soy sauce (3½ tbsp), oyster sauce (3½ tbsp), fish sauce (1 teaspoon) and sugar (1) until combined; hold this complete sauce separately from the prepared noodles.
Step 2: Peel and finely chop the garlic (3), wash and finely chop the bird’s-eye chillies (3) and thinly slice all the sirloin. Heat all the oil (2) in a large wok or frying pan over high heat. Stir-fry all the garlic and chilli for twenty seconds until just starting to turn golden, then add all the thin steak slices and stir-fry for one minute until seared and starting to brown.
Step 3: Wash the long-stemmed broccoli (100 g) and cut it into 3–4 cm pieces. Add all the broccoli to the actual steak wok and stir-fry for one minute. Tip in all the actual prepared drained noodles and all the mixed sauce, then stir-fry for another one to two minutes until evenly combined and piping hot and the thin steak slices are cooked through.
Step 4: Wash the Thai basil leaves, stir the full large handful through the actual hot noodles and turn off the heat. Serve immediately as two portions to avoid overcooking.
