Step 1: Put the flour (220 g), salt (¼ tsp), sugar (75 g) and cubed butter (110 g) into the bowl of a food processor. Pulse 4 times to combine.
Step 2: Add the egg (1) and pulse 4 times.
Step 3: Gather the mixture into a ball and knead briefly.
Step 4: Flatten the pastry into a disc and wrap in clingfilm.
Step 5: Place in the fridge for 30 minutes to chill.
Step 6: While the pastry chills, combine the filling ground almonds (80 g), 15 g filling flour, 50 g filling sugar, separate ½ teaspoon filling salt and baking powder (½ tsp) in a bowl.
Step 7: Melt the separate 50 g filling butter over low heat or in a microwave.
Step 8: Cool the melted filling butter slightly, then beat it into the prepared dry filling ingredients with a wooden spoon.
Step 9: Beat the separate filling egg (1) and almond extract (1 tsp) into the prepared almond mixture.
Step 10: Roll the chilled pastry about 5 mm thick on a surface dusted with separate extra flour.
Step 11: Cut twelve rounds with a 68 mm cutter and line a twelve-hole shallow tart tin. Put 1 teaspoon of the measured jam in each pastry shell.
Step 12: Divide the prepared frangipane evenly over the jam-lined shells using two teaspoons.
Step 13: Decorate the filled tarts with the optional whole or flaked almonds (1 tbsp), or cut thin crosses from leftover pastry scraps.
Step 14: Bake the decorated tarts in a preheated oven at 180°C conventional (356°F) or 160°C fan for about 20 minutes until golden.
Step 15: Cool the baked tarts in their tin for a few minutes, then lift onto a wire rack and cool completely.
