Step 1: Combine 6 quarts water, black beans, bay leaves (4), salt (to taste), and pepper in a large saucepan. Bring to boil; simmer for 50 minutes.
Step 2: Use dried beef (1 pound) that has already been desalted if it is a salted product; follow its package desalting directions before this step. Bring the remaining 2 US quarts (8 cups) water to a boil in another large saucepan. Add dried beef, smoked ribs and unsalted pig feet and simmer about 25 minutes. Add smoked sausage (1), spicy sausage (1 pound), large bacon (½ pound) pieces, pork belly (¼ pound), unsalted pig ear and tails; simmer about25 more minutes, until softened.
Step 3: Stir meat mixture to the bean mixture; simmer until flavors combine, about 45 minutes.
Step 4: Heat vegetable oil (2 tablespoons) in a large skillet over medium heat; add garlic (4 cloves). Cook until warmed through, about 45 seconds; transfer to bean mixture. Add small bacon (½ pound) pieces to the skillet; cook and stir until lightly golden, about 2 minutes. Stir in onion (2); cook until onion is soft and browned, about 5 minutes. Stir in parsley (2 bunches).
Step 5: Stir the onion mixture into the bean mixture; simmer until tender, about 25 minutes. Transfer meat mixture to a serving dish. Pour beans into a separate serving dish.
