Step 1: Lightly coat a nine-inch pie pan with cooking spray and line it with the room-temperature pie crust. Set aside.
Step 2: Preheat the oven to 375°F.
Step 3: Whisk the eggs (5 large), milk (¾ cup) and Greek yogurt or sour cream (¼ cup) in a medium bowl. Add ⅛ teaspoon salt and some of the listed ¼ teaspoon black pepper, reserving the remaining pepper for the shrimp. Set the custard aside.
Step 4: Heat the olive oil (1 tablespoon) in a medium skillet over high heat. Add the diced onions (2 cups) and cook, stirring frequently, until they start to become transparent, about 2 minutes.
Step 5: Add the shrimp (1 pound) to the onions and cook over medium heat, stirring frequently, until cooked through, about 5 minutes. Season with ¼ teaspoon salt and the pepper reserved from the listed ¼-teaspoon total.
Step 6: Spread the cooked onion and shrimp mixture over the crust. Layer on the spinach or Swiss chard (1 cup) and mozzarella (4 ounces). Pour the egg mixture over the top, then add tomato slices.
Step 7: Bake until puffed and firm when touched in the center, 45 to 50 minutes. Cool on a wire rack for 15 minutes, then cut into 6 pieces.
