Step 1: Heat the oven to 400°F / 205°C. Line two large baking sheets with parchment paper.
Step 2: Remove and discard the seeds and trim the ends of both peeled, lengthwise-halved squash. Put each half cut-side down and slice into evenly thick half-moons, about ½–¾ inch thick. Put all the slices in a large mixing bowl.
Step 3: Whisk all the melted unsalted butter (4 tablespoons), ground cumin (1 teaspoon), ground coriander (1 teaspoon), ground cinnamon (½ teaspoon) and honey (2 teaspoons) in a small bowl. Pour all this coating over the prepared squash slices and toss until every piece is coated.
Step 4: Spread all the coated squash slices across the two lined sheets in a single layer. Bake both sheets at 400°F / 205°C for 20 minutes.
Step 5: Turn the slices over and rotate the two baking sheets in the oven. Bake another 20 minutes, until the squash is tender and golden. Prepare the drizzle in the next step while this second bake continues.
Step 6: While the squash finishes baking, whisk all the maple syrup (1 tablespoon) and the measured tablespoon lime juice (1 tablespoon) together in a small bowl.
Step 7: After the squash is tender, transfer all the roasted slices to a serving dish and drizzle with all the prepared maple-lime mixture. Garnish with chopped pecans and optional cilantro, then serve in 8 side portions.
