Method4 steps · about 1 hr 30 min

  1. Step 1: Put the whole chicken (1) in a large stockpot with the onion (1), peppercorns (3), whole cloves (3), allspice and bay leaf (1). Cover well with cold water and add the tablespoon of salt (1 tbsp). Bring to a boil, then simmer for about 1 hour, skimming foam occasionally, until the chicken is cooked through and reaches 74°C (165°F) in the thickest part away from the bone.

Simmer chicken · 60 minUses 1 whole chicken · 3 allspice berries · 1 bay leaf · 3 whole cloves · 1 tbsp salt · 3 peppercorns · 1 onion for chicken broth · cold water to cover whole chicken

  2. Step 2: Lift out the cooked chicken, onion and whole spices, keeping the broth in the pot. Discard the onion and spices. Remove the chicken meat from the bones and cut it into bite-sized pieces.

Uses chicken simmered with onion and whole spices about one hour until fully cooked

  3. Step 3: Peel the carrots (2) and celeriac (150 g), then cut them into cubes.

    Uses 2 carrots · 150 g celeriac

  4. Step 4: Return the cut cooked chicken to the reserved broth with the diced carrots, celeriac and small noodles (250 g). Simmer for about 10 minutes, until the vegetables are tender and the noodles are cooked; check the noodle package directions and adjust if needed. Season with extra salt (to taste) to taste and garnish with chopped parsley.

Cook noodles · 10 minUses 250 g small noodles · parsley · extra salt to taste at serving · broth remaining after cooked chicken, onion and whole spices removed · cooked chicken removed from bones and cut into bite-sized pieces · two carrots and 150 g celeriac peeled and diced
