Step 1: Preheat the oven to 450°F (230°C).
Step 2: Prepare a baking tray, lining it with aluminum foil if desired for cleanup.
Step 3: Trim the green beans (1 pound) and dry them thoroughly with a paper towel. Spread on the tray, add the 2 tablespoons roasting olive oil and 1/4 teaspoon fine sea salt, and toss to coat. Arrange in one layer for even roasting.
Step 4: Roast for 12 minutes, until the beans are browned and almost tender. Make the garlic sauce while they roast.
Step 5: In a small bowl, mix the 2 tablespoons soy sauce or tamari, the chosen 1 tablespoon chicken stock, rice wine or water, the 1 tablespoon sugar and 1/2 teaspoon cornstarch. Slice the garlic (4 cloves) if not already prepared.
Step 6: Warm the separate 2 teaspoons sauce olive oil in a small saucepan over medium heat. Add the sliced garlic and stir for about 1 minute, until fragrant.
Step 7: Stir the mixed soy sauce, chosen liquid, sugar and cornstarch again and add it to the garlic pan. Bring to a boil, then keep stirring until the sauce thickens.
Step 8: Pour the thickened garlic sauce over the almost-tender roasted beans and toss to coat. Return to the 450°F (230°C) oven for another 2–4 minutes, until the sauce is caramelized and the beans are tender.
Step 9: Serve the glazed green beans warm as a side dish.
Step 10: If making ahead, cool briefly and promptly refrigerate the cooked beans in a covered airtight container at 40°F (4°C) or colder for up to 1 day. Refrigerate within 2 hours, or within 1 hour above 90°F (32°C). Reheat in a 350°F (180°C) oven or in the microwave until hot throughout, at least 165°F (74°C).
