  1. Step 1: Mix all the 1 lb chicken pieces with the 1 tbsp marinade Shaoxing wine, ¼ tsp salt and 2 tsp marinade cornstarch until evenly covered in a thin slurry. Keep refrigerated while preparing the sauce and vegetables; no fixed marinating time is needed.

Uses 1 lb boneless skinless chicken thighs, cut into 1-inch (2.5 cm) pieces · 1 tbsp Shaoxing wine for marinade · ¼ tsp salt for marinade · 2 tsp cornstarch for marinade

  2. Step 2: Mix all the sauce ingredients in a small bowl: 1 tbsp oyster sauce, 1 tbsp sauce Shaoxing wine, 1 tbsp soy sauce, 1 tsp dark soy sauce, 2 tsp sugar and ½ tsp sauce cornstarch. Reserve the whole sauce.

  3. Step 3: Heat 1 tbsp of the peanut oil in a large skillet over high heat. Add all the marinated chicken from step 1 in one layer without overlapping. Sear about 2 minutes on the first side until golden; flip and cook the other side about 1–2 minutes, continuing until the chicken reaches 74°C (165°F). Transfer all the cooked chicken to a plate; retain any pan oil and cooking juices for step 4.
