Method7 steps · about 45 min
Step 1: Wash and roughly chop the broccoli (1 Head), keeping chunky stalk pieces separate from the remaining florets. Peel and finely chop the onion (1). Heat all the rapeseed oil (2) in a large saucepan and cook the onion over medium heat until soft; hold both broccoli portions for later.
Step 2: If the onion starts to catch, add a small splash of the conditional water and stir to loosen it. Otherwise continue without extra water.
Step 3: Wash and slice the celery (1) stick and leek (1), and peel and dice the potato (1 medium). Add all of them and the knob of butter to the onion pan. Stir until the butter melts, then cover.
Step 4: Sweat the covered vegetables gently for five minutes, then remove the lid.
Step 5: Pour in all the hot vegetable stock (1 litre) and add the held chunky broccoli stalk pieces. Simmer for 10–15 minutes until all these vegetables are soft.
Step 6: Add all the held remaining broccoli florets and cook for another five minutes. Carefully blend the complete soup until smooth, handling the hot liquid in suitable batches if needed.
Step 7: Crumble all the Stilton and stir it into the prepared smooth soup, allowing a few cheese lumps to remain. Season with black pepper and serve four portions.
