Step 1: Choose 300 g atta or 2½ cups all-purpose flour. Mix the chosen flour with the optional ½ tsp salt and 1 tbsp kneading oil. For atta, start with ¾ cup warm water and add up to the remaining ¼ cup as needed. For all-purpose flour, start with its separate ⅔ cup warm water and add extra water only if needed. You may dissolve the optional 2 tsp fine sugar in the chosen water. Form a soft, non-sticky dough, adjusting with a little extra water or flour if necessary.
Step 6: For a triangle, fold the greased sheet in half. Apply a little more of the shared fat and a pinch of dusting flour, then fold again into a triangle. Skip step 7.
Step 7: For a square instead of a triangle, fold the left third over the middle, then the right third. Add a few drops of the shared fat and a pinch of dusting flour, then fold the top and bottom thirds into a square. For a round paratha instead, stretch the greased sheet into an oblong, roll into a long log, gently stretch without tearing, then coil from one end and tuck the end into the center.
Step 9: Heat the pan over medium heat until moderately hot. Shake excess dusting flour from the rolled paratha and place it in the pan.
Step 10: When bubbles appear after about 40–60 seconds, flip the paratha. Drizzle ¼ tsp from the shared frying fat and spread gently.
Step 11: When the paratha starts to puff, flip again and add a little more of the shared fat if needed. Press gently, especially around the edges, until cooked through with light brown spots.
Step 12: Remove the cooked paratha and stack in a clean cloth to keep soft. Repeat steps 4–11 with the remaining seven dough balls, cooking fat and dusting flour, choosing one fold for each. Reheat the pan between parathas without letting it smoke.
Step 13: Serve the eight parathas warm, with an optional prepared curry or other accompaniment. Cool leftovers, refrigerate airtight for up to three days and reheat in a moderately hot pan.
