Step 1: Cut all the raw ribeye into bite-size cubes and peel and mince the four marinade garlic cloves. Mix the beef with all the beef-marinade soy sauce (5 tbsp) and oyster sauce (5 tbsp), fish sauce (1 tbsp), marinade garlic, sugar (2 tsp), Yum Yum Meat Velvet (2 tbsp) and the separate two tablespoons marinade water. Cover and refrigerate for at least thirty minutes, or overnight. Keep this raw-beef marinade separate from the noodle sauces. While it marinates, prepare the vegetables for step 6 so they are ready before you sear the beef.
Step 2: While the beef marinates, prepare all two noodle portions according to their package so they are ready for stir-frying, then drain well if required. Use the package cooking or loosening instructions for the particular egg noodles (2).
Step 4: Add all the prepared drained egg noodles to the garlic and oil in the wok. Add all the butter (4 tbsp), the separate two tablespoons noodle oyster sauce and one tablespoon noodle soy sauce, chicken powder (0.5 tsp) and half-teaspoon Yum Yum seasoning (0.5 tsp). Toss until the butter melts and the noodles are coated and hot, then transfer the finished garlic noodles to a clean plate and keep warm.
Step 5: Heat the remaining two tablespoons oil in the same wok. Lift the marinated beef into the wok, letting loose excess marinade drip back into its bowl, and discard that remaining raw-contact marinade. Sear the beef on both sides until browned, working in batches if needed for browning. Continue cooking it with the vegetables in the next step; do not use browning alone as the doneness check.
Step 6: Have the washed, chopped red and green bell peppers and the peeled, chopped half onion ready before starting the beef stir-fry. Add all these prepared vegetables to the seared beef and stir-fry for about one minute until lightly charred. Season with black pepper to taste and toss. Check the thickest beef cubes reach at least 63°C (145°F), continuing cooking if needed, then turn off the heat.
Step 7: Let the cooked beef and vegetables rest off the heat for at least three minutes after the final cooking step. Divide all the warm garlic noodles between four plates and top with the rested beef and vegetables. If desired, finish with washed sliced green onions, washed fresh herbs and lime wedges. Serve promptly.
