  1. Step 1: Open both 15.5 oz cans of ready-cooked cannellini beans. Drain them over a bowl, reserving all the packing liquid from both cans. Keep the drained beans separately for the final simmer; do not rinse or discard their liquid.

  2. Step 2: Heat the 2 tbsp cooking oil in a cooking pot over medium heat.

  3. Step 3: Add the chopped yellow onion (1 medium) to the hot oil. Cook, stirring, until softened and somewhat caramelized.

  4. Step 4: Add the 1/2 cup cubed double-smoked bacon to the softened onion and cook, stirring, for 1 minute. It will continue cooking in the sauce.

  5. Step 5: Pour in the complete 8 oz can of tomato sauce, 2 tbsp white vinegar and all the reserved bean packing liquid. Stir in the 3 tsp mustard powder and bring to a boil. Cover, lower the heat and gently simmer for 30–35 minutes, stirring occasionally. If the sauce starts to dry up, add only enough water to keep it simmering without scorching.
