  1. Step 1: Cover all 20 dried edible lily-bud strands with warm water in a bowl. Soak for about 30 minutes until soft, then drain, trim any tough ends and cut each strand in half crosswise. Keep the drained buds ready; discard the soaking water.

  2. Step 2: In a separate bowl, cover all 5 g dried wood ear mushrooms with warm water. Soak for about 10 minutes until fully softened, then rinse, drain and tear into small pieces, trimming tough bases. Discard the soaking water. Start this while the lily buds soak.

  3. Step 3: Before heating the wok, wash and slice the cucumber (80 g), wash and finely chop both scallion (2 stalks) stalks, and have the minced ginger (1 teaspoon) ready. Lightly beat all three medium eggs in a separate bowl. Slice the raw pork tenderloin (150 g) thinly against the grain, mix with all 1 tbsp Shaoxing wine and stir until absorbed. If slicing is difficult, the pork can first be chilled in the freezer for 1–2 hours until semi-frozen. Keep prepared raw pork separate from the egg and vegetables.

  4. Step 4: Heat 1 tbsp of the oil in the wok over high heat until very hot. Pour in the prepared beaten eggs. As the edges set, push them aside so uncooked egg flows to the centre. Continue until the egg is fully set, break it into bite-size pieces and transfer to a clean plate.
