  1. Step 1: Preheat the oven to 350°F / 175°C. Thoroughly coat a ribbed Swedish almond cake pan OR 9 × 5-inch loaf pan with nonstick baking spray, even if its surface is nonstick. Set the pan on a rimmed baking sheet.

Uses Nonstick baking spray for coating the cake pan

  2. Step 2: Whisk flour (1 1/4 cup), baking powder (1/2 teaspoon) and salt (1/2 teaspoon) in a medium bowl. Set aside.

Uses 1 1/4 cup flour · 1/2 teaspoon baking powder · 1/2 teaspoon fine sea salt

  3. Step 3: Melt the ½ cup butter and let it cool. In a large bowl whisk sugar (1 1/4 cup), egg (1), almond extract (2 teaspoons) and milk (2/3 cup). Whisk in the prepared flour mixture, then add the cooled melted butter and mix until fully combined.

Uses 1 1/4 cup sugar · 1 egg · 2 teaspoons pure almond extract · 2/3 cup whole milk · Whisked flour, baking powder and salt mixture · 1/2 cup unsalted butter (1 stick, melted and cooled)

  4. Step 4: Pour the batter into the prepared pan and bake on the rimmed baking sheet for 35–45 minutes, until the edges are golden and a toothpick inserted in the centre comes out clean. A standard 9 × 5-inch loaf pan may require a few extra minutes; follow the doneness test.
