Step 1: Cut tofu into thick strips. Either larger or smaller. Then coat with cornstarch one by one.
Step 2: Mix the 1 tablespoon sauce starch with vinegar (1 tbsp.), light soy sauce (2 tsp.),5 tablespoons water, sugar (2 tbsp.) and salt (1/4 tsp.) until smooth; reserve this sauce separately from the starch used to coat tofu.
Step 3: Heat oil in pan and fry tofu strips until golden brown. Transfer out.
Step 4: Keep the oil and then fry minced pork (1/4 cup) until crisp and browned, slow down the fire, add doubanjiang (1/2 tbsp.) and pickled peppers (1 tbsp.). Fry for a while until the oil turn reds.
Step 5: Add garlic (2), ginger (1 tbsp.) and scallion whites to the pork mixture and fry until aromatic. Stir the prepared sauce again, pour it in and simmer 2 minutes until thickened.
Step 6: Return the fried tofu strips, gently mix to coat with the sauce and finish with the reserved scallion greens. Serve hot.
